Heat a large skillet to medium high heat. Add the vegetables, onion, and a couple tablespoons of water to "water-saute" the vegetables. Add the curry blend, cashews, and raisins. When the vegetables are cooked to your liking, add the rice and mix well. Cook until the rice is heated through. Squeeze lemon juice over the rice.
