I have been thinking about this class for a long time and experimenting with tofu poke bowls full of unique ingredients such as ogo seaweed and kukui or macadamia nuts, versions of sushi that look like the Spam Musubi so popular in Hawaii. I have fond memories of banana bread on the Road to Hana and the special granola we enjoyed every morning at the Westin hotel, while we were on our honeymoon in Hawaii 20 years ago. My Tofu Poke Bowl, with roasted instead of fried tofu, is fresh and bursting with flavor, complemented by a bowl of a new version of miso soup.
