We know so much more today about how our daily diet will impact our health throughout the years. This knowledge has empowered me to help myself and others learn how to cook like the populations who enjoyed the longest, healthiest lives. Known as the Blue Zones, these areas of the world lived high-quality long lives. What did they eat? There were no secret foods or supplements; mainly whole foods, plant-based diet with other foods in small quantities. My favorite chef activity these days is teaching cooking to others, especially in the kitchen classroom in my country home with a relaxing view, herb and vegetable gardens, and plenty of birds. One of my students recently told me, “You’re making me fall in love with the idea of cooking.” That was the best compliment I could receive.
